A recent Adventure Travel Exhibition in London, I had the pleasure of meeting Elspeth Fimpel, the inspiring force behind Joyful Outdoors and a dedicated volunteer for Love Her Wild. With a deep passion for nature and adventure, Elspeth encourages people to connect with the outdoors through foraging, exploration, and mindful engagement with the natural world.

During our conversation, she shared insights into the benefits of immersing ourselves in nature, from boosting mental well-being to fostering a deeper appreciation for our local environment. Elspeth also believes in the importance of learning to identify neighborhood trees and plants that are safe and sustainable for foraging. Her enthusiasm for outdoor adventures and her commitment to making nature more accessible to all is genuinely infectious.

This April, Elspeth is taking part in an eat natural project organised by fellow forager Mo Wilde. Here she talks about acorn flour, foraging for citrusy flavours and spending a month without dairy products!
